Pork Fried Rice (Serves 6)
1 L   rice, cooked 4 cups
4   slices side bacon 4
375mL cooked Pork, cut in thin strips 1 1/2 cups
4 green onions, chopped  4
2 eggs, lightly beaten 2
25mL soy sauce  2 tbsp.

The rice should be cooked the day before it is needed and refrigerated overnight. Place bacon in a large skillet and cook over medium heat until crisp; remove from heat. When cool, crumble into small pieces. Add rice to skillet and cook until golden, over medium heat. Add crumbled bacon, Pork and green onions. Stir-fry 1 minute. Make a hollow in the centre and pour in the eggs. Stir until they begin to set; mix into the recipe mixture. Pour in soy sauce and stir until well blended.

Easy Pig Cupcakes
1 pkg.  white cake mix (18 1/4 oz.)
1(16 oz.)  container strawberry frosting 1
96 mini M&M baking bits 96
12 large marshmallows, halved 12
pink wafer cookies

Mix and bake cupcakes according to package directions. Cool. Frost with strawberry frosting. Add two brown M&Ms for eyes. Use frosting as glue to attach two brown M&Ms to marshmallow for nostrils. Place marshmallow on cupcake for snout. Cut two triangular pieces of pink wafer cookies for ears. Yield: 24 cupcakes.

Mini Pork Meat Loaves
Prep time: 10 minutes Bake time: 20 minutes
Mix 1 1/2 (750 g) lean ground Pork, 1 pkg Stove Top Pork Stuffing Mix, seasoning
and 1/2 cup (125 mL) hot water in mixing bowl.
Shape into 4 individual meat loaves. Spread each meat loaf with Barbeque Sauce.
Bake at 350 degrees F (180 C) for 15 to 20 minutes or until done.
Makes 4 servings.
